MOLLY'S SQUASH CASSEROLE (CALABACITAS)
Roast several green chilies (cut in half, take out seeds, push till flat and broil until skin is black. Using tongs, place in a zip lock bag and when able to handle, peel off skin, and chop)
Saute a chopped onion and minced garlic in a little oil
Add frozen corn (or fresh, cut off cob) and saute until corn is warm
Take off heat and add fresh, chopped tomatoes and roasted, chopped chilies
Season to taste with salt and pepper
Slice squash and steam (zuccini and yellow) until firm but tender
In a casserole dish or large bowl, put a layer of squash, top with cheese, add half of the onion mixture and repeat topping with cheese. Cover so cheese can melt and serve immediately.
Note: onions are a trigger for some people, you can substitute dried onions if onions are a problem for you. Dried don't have the same affect as fresh.
EGG WHITE PANCAKES
I am always looking for healthy lowfat recipes, and I was so pleased with this one. I need protein in the morning and don't like eggs very much, so this recipe is perfect for me. Sounds weird, but is really tasty.
Combine 3 egg whites, 1/3 cup old fashioned oatmeal, 1/2 container (7oz) of Greek yogurt, and 1/8 tsp Stevia (or sugar). Let sit for a few minutes. Add 1/3 - 1/2 cup of blueberries (fresh, frozen or canned).
Oil griddle and spoon on batter and cook just like you would pancakes (when edges look done and bubbly in the midde, turn)
Makes about 4 small pancakes, double if needed. Serve with a little Organic Valley Whipped butter and a little 100% pure maple syrup or Nature's Hollow sugar free preserves.
